What's for Dinner?

I'm home from Utah after a very long day of air travel yesterday and then a 2 hour drive from Portland that put me home at 1:30 am.  I didn't mind waking up early to a massive snuggle pile in bed with Sam and both kids.   Clearly, the kids had a great weekend with Sam who kept everyone busy and happy, and managed to clean the house top to bottom, do all the laundry, and prep dinner for tonight despite having a rainy weekend with no backup.  I always have a heavy heart for a few days after leaving my mom and siblings behind,  but it's very good to come home, too.

Here's a "What's for Dinner?" from a simple meal I made last week.  I have even more Utah photos and stories to sort through and post in the next day or two. 


I totally made this recipe up.  I'm crazy for sweet potatoes, so I put them in everything I can think of.  Just try it, okay?

Mix refried beans  (I like the spicy ones with green chiles) with 2 mashed-up small baked sweet potatoes.  FYI:  I baked the potatoes the day before and they were in the fridge.

Pile a scoop of the bean/ potato mixture onto a corn tortilla and sprinkle with shredded cheese.  My grocery store (Hannaford) has these great hand-made style corn tortialls that are thick and chewy.


Bake at 350 for about 20 minutes or until heated through and the cheese is melted.

Then, top with diced avocado, salsa, and a dollop of sour cream.  And a side salad.  Done!
