What's for Dinner?

This week?  What's for Dinner? You tell me!  This has been one of those weeks of recovering from the marathon and being behind the 8 ball. Sam was on a white water rafting trip until late last night with his seniors.   Tonight I won't be home until 10 because I'm the co-chair of my school's Senior Banquet.  I need groceries.  Actually,  I need a day off to recover from everything and get organized.  We've been having really random dinners, but because this week was also our first pick up from our farm share, we've at least been eating lots of salads and veggies.  Last night I had a huge bowl of baby bok choy for dinner.  And then ice cream for dessert. 

Good thing I saved some photos from an actual meal last week.

Peanut noodles with baked tofu and sweet potatoes:

2 packages of Chinese noodles (or 1 if you don't have a big eater like Sam to feed), cooked according to the directions.
1 package of firm Tofu, cubed, drizzled in soy sauce and baked at 400
1 sweet potato, diced and drizzled with olive oil and baked at 400 (potato and tofu go in together for 20-ish minutes)
1 bunch of scallions, diced and sauteed in sesame oil
A few handfuls of baby spinach

Peanut sauce:
  • 1/2 cup crunchy peanut butter
  • 2 tablespoons soy sauce
  • 1 teaspoon brown sugar
  • 1 tablespoon sesame oil
  • 1 clove garlic, minced
  • 1/2 cup water
Mix the sauce, toss with the noodles and a few handfuls of baby spinach, serve with the tofu, sweet potatoes and green onion on top.
