What's for Dinner?

This dinner was a happy accident.  Sam and I each had a dinner planned for the other night.  I intended to make a whole wheat pizza with the last of the pesto, tomatoes from our garden, and fresh mozzarella.  Sam had already breaded and baked some of our eggplant from the farm share, and was ready to make Eggplant Parmesan.  (He had dipped it in egg and then bread crumbs and baked it at 400 for about 15 minutes).  So, we added it to the pizza!

It was delicious: the crunchy eggplant and the lemony pesto with the bubbly cheese.  Mmmmmm.   We started eating right away and I remembered to grab a piece for the blog.  We will definitely  make this one again.

I'm back from another fantastic day and night in Portland.  My mom and I drove down yesterday to pick up my sister and my nephews who are here from Utah for a WEEK of fun.  The forecast is impeccable, and I am never happier when in the presence of my big sis. I'll break away later to upload photos from today's adventure. 

Sam spent the day (while the kids were at school) prepping dinner that he is finishing up right now, and soon we'll all sit down for a dinner on the patio.  It's cool enough that the fire in the chimenea feels just right; the New England crisp fall air has arrived.

My sister's visit coincides with the end of summer,  and we will send the season out with a bang after 7 straight days of the best Maine has to offer.

I'm drooling here. I love it when two recipes marry each other and end up happy together! :)
