What's for Dinner?

This one is too easy to count, so I'll give you two today.  But isn't a BLT, spinach salad and corn on the cob such a summery meal?  Yes it is.

True story:  I was a vegetarian for 4 years and the night I decided to start eating meat again, I ordered a BLT at a restaurant.    Mmmm.  Bacon.

Also, the Maine corn was surprisingly good, and after all the talk about the superiority of Michigan corn, this cob could compete!

Here's an even better summer meal, but looks are deceiving.  This is gazpacho, crispy kale, quessadillas and melon from the farm.

Last week's farm share was all of the ingredients for gazpacho, so I came home and dumped it all into the blender.  Half of the tomatoes were yellow, which is why the color of the soup is so weird.  Don't judge.  Just make it and eat it.

Place in the blender:
1/2 cup of olive oil
1/4 cup of sherry vinegar
1 cucumber (I didn't peel mine)
1 white onion
2 cloves garlic
1 green pepper
4 big heirloom tomatoes
1 tsp cumin
salt and pepper to taste

{one recipe I read suggested adding one naval orange too.}

Chill and serve!
