What's for Dinner?

Spicy Coconut Noodles!

Sounds good, right?  I made this recipe a few weeks ago after finding the torn out page from Real Simple magazine in my files.  But I made the mistake of using low-fat coconut milk and it was quite bland.  I kept adding hot sauce and it was still pretty bland.  THEN, I made it again with regular coconut milk and it was very good, so don't try the lite version, go for the full flavor.

I followed the sauce recipe from the original, but added broccoli and tofu to my noodle bowl.  I used whole wheat linguine though I would stick with the rice noodles if you can find them.   The coconut flakes on top and a squeeze of lime juice added a nice snap, too.  YUM.

Ohh that looks delicious!! Lovely to see your blog again and to read of your running. You're amazing! Very proud to say I'm still running and loving it even though I can't get out there much. I'm in training for my first half marathon which will happen in July. Super excited about it!!
