This was the scene on Saturday night at Suzanne and Sandi's house: Five women cooking and laughing in the same kitchen while drinking wine and eating appetizers that we all brought to share. This was my brilliant friend Ange's idea, and it's going to become a monthly occasion.
Here is the deal: Each person brings the ingredients to prepare a meal multiplied by 4. You prepare your meal and then divide it into 4 containers. Each person leaves with 4 different delicious meals for the freezer. Isn't that smart? AND it was so much fun that all the food in my freezer feels just like a bonus.
All of my friends are vegetarians, so we all made vegetarian meals.
Kim made Spicy Black Bean Soup.
Ange made African Peanut Sweet Potato Stew with garbanzo beans, coconut milk, lentils and ginger.
